REPUBLIKA.CO.ID, BOGOR - The researchers from F-Technopark in Institut Pertanian Bogor (IPB) creates an alternative food similar to rice. It is called analog rice.
"The product is developed from local flour besides rice and flour," the Director of F-Technopark, Dr Slamet Budijanto said on Sunday.
The researchers call the rice as artificial rice. Budijanto said this food product was specially made to produce functional characteristic by using local flour, such as sorghum, sago, and tubers. Other food ingredients, fiber, antioxidant, can be added.
Budijanto said, Technopark used extrusion technology using tween screw extruder with specially designed dye to control the process condition and its formula. Generally, extrusion technology makes it possible to mix, mill, cook, cool down, dry, and mold in a chain process.
